The Food Safety File
The Food Safety File contains background information about a broad range of food-related problems which received a lot of attention during the last ten years. Every chapter starts with the relevant scientific background information, based on the most recent data, including information about legislation. The sources of infection/intoxication are described as well as preventive measures which can be taken. In addition many examples from daily practice are mentioned and information is given about recent research activities with regard to control of foodborne problems. Because food processing has a very dynamic character, The Food Safety File is being updated continuously and a new edition of the file will be issued annually.
Chapter 4, about Listeria monocytogenes and part of chapter 6, about Staphylococcus aureus can be viewed.
The Food Safety File provides information to quality assurance managers in the area of production, handling, processing and catering of food, managers in charge of food safety surveillance within Food Safety Authorities, consultants in food safety and scientists interested in food safety.
The file comprises about 800 pages, subdivided into 16 chapters, with information about 14 species and families of pathogenic micro-organisms, mycotoxins, preservatives, preservation techniques and risk assessment. The information is enlightened by many tables, graphs, figures and photographs.
